Pan Fried Goat Steak
 
DIRECTIONS
  1. Sprinkle steaks on both sides with lemon-pepper marinade.

  2. Heat a large cast-iron skillet until hot enough to melt margarine, and slice several chunks of margarine into skillet to melt. As soon as margarine is melted, drop steaks into skillet.

  3. Cook only about a minute on each side, depending on the thickness of the steaks. Be careful not to overcook.

  4. Add more margarine as needed to keep the meat from sticking.

  • Lemon-pepper marinade

  • 1/4 pound butter or margarine
